RECIPE FOR SUCCESS (UNDERSTANDING FLAVOURS)
Ever wondered what our ancestors used to season their food before the advent of
the Maggis, Knorrs, Roycos etc. I used to wonder how their meals tasted because, really, these seasonings work like magic. I also used to wonder how intercontinental dishes cooked outside Nigeria, by foreigners, actually tasted. I watch food network a lot and I never saw them mention maggi or something in their recipes. I've tasted Chinese dishes and not for once have I tasted maggi et al in their dishes. Well, I came to the conclusion that it's possible to cook without artificial non-organic seasonings.
I got acquainted with a health and nutrition expert who was able to school me on the disadvantages of cooking with artificial seasonings; something about MSG. Well, I finally got my motivation. I bought different natural spices and dried herbs; Dried thyme, rosemary leaves, turmeric, cumin, curry, name it. I have a cabinet stocked with different types of spices. I prepared my first meal, jollof rice, and it tasted really delicious but for the overpowering mustard flavour. I learnt to be careful with the mustard. I kept cooking without the artificial seasonings and today I can boldly say I don't cook with maggi, knorr etc, and my food tastes great. I'm officially a fantastic cook.
One of my observations through this whole process is you must first understand the spices in your kitchen and how they work with one another. Too little turmeric and you may not get your desired flavour, too much rosemary leaves and you get a bitter taste. Cinnamons can be overpowering except you're using it for pastries. To get the best flavour, you must understand you don't have to use all the spices in your kitchen. You must also understand the proportions at which you use them.
Cooking is basically a marriage of different ingredients.
Just like cooking, to succeed as a gospel artiste and generally in life, you must understand relationships. I struggled with that for quite some time but then I realised I needed relationships to go far in life. No man is an island. Your relationship with others is measured by a currency called good-will. How much goodwill do you have in your relationship account. Goodwill can save you a lot of money. You can start a business with mostly goodwill. maybe what you need to kickstart your career is some goodwill.
Also remember the quality of relationships you keep will determine the value of your goodwill. Choose your relationships wisely.
